Wagyu is the breed of cattle, originally from Japan, that is behind the most famous brands of beef in the world, such as Kobe Beef. Mishima Ranch cattle are bred using the highest quality Wagyu bloodlines. All Mishima Ranch cattle are 50% to 100% Wagyu. The non-Wagyu portion of these cattle is Angus, another breed known for it's quality and consistency.
Marbling Equals Flavour
Wagyu cattle are unique in that they have a genetic ability to store marbling within the muscle instead of outside the muscle. Marbling is the key component to extra flavour and tenderness.
